But not just that cheap chocolate you grab at London Drugs in those cute little heart boxes that always seem to disappoint. I'm talking RICH and OOZY chocolate. The good stuff 😎
Whatever the occasion, these mini lava cakes are so decadent - and the easiest dessert to make! You're gonna be sooo impressed with yourself once you whip up a batch of these.
And they are MINI. So you won't feel so bad once you eat one. then two. then three.

Ingredients
1/4 cup butter (Melt Organic butter if dairy-free) 2 baking squares of semi-sweet chocolate (2 ounces) 1/2 cup powdered sugar 1 egg 1 egg yolk 1/2 teaspoon vanilla extract 1/4 cup all-purpose flour
Method
Preheat oven to 425 degrees f. In a microwave safe bowl, melt butter in microwave in 30 second increments until completely melted. Roughly chop up the chocolate chunks and add to hot butter. Using a spoon, mix in chocolate until completely melted and smooth. Add in powdered sugar and mix until smooth. Add egg, egg yolk, and vanilla extract. Continue mixing until smooth. Add in flour and again, mix until smooth! Pour into four silicone baking moulds if you want them mini (like this). You can also make 2 larger ones by using standard ramekins. Bake for 10 minutes until middle still jiggles a tiny bit in the centre but outside is cooked. Let cool for 2-3 minutes then pop them out onto a plate and eat right away. It's best when its fresh and that warm gooey chocolate oozes out... Enjoy!
