Looking for your next baking creation but not sure if you have the ingredients? That couldn't be more true to how I'm currently feeling with it being week two of self-isolation due to COVID-19. Luckily, these strawberry squares require very few ingredients that I'm almost positive you have kickin' around 😉
These are also great because they only make 8 squares instead of a whole giant pan, so it's perfect while in quarantine because you probably don't want 16+ strawberry squares sitting your place. Or maybe you do? I'm not judging.
Normally, I'd encourage you to make a strawberry compote so you can control how sweet you like it but, we're living in some pretty surreal times right now and that means a jar of jam works if it's all you got 🤪 Ready for your next quarantini project? Literally, one bowl and a half jar of jam and you can call it a day. Recipe below👇
Ingredients
1/2 butter, room temperature (Melt Organic if making these vegan)
3/4 cup all-purpose flour
1/3 cup rolled oats (not quick oats)
1/2 cup packed brown sugar
1/2 tsp baking powder
1/2 teaspoon salt
One half jar of Strawberry Jam (12 oz jar)
Method
Preheat oven to 350 degrees f. Line a loaf pan with parchment paper and spray sides with non-stick cooking spray. Set aside.
In a medium-sized mixing bowl, mix together butter, flour, oats, brown sugar, baking powder, and salt. Beat together until evenly combined.
Press half of the mixture down into the prepared loaf pan. Spread your strawberry jam evenly on top. Sprinkle remaining crumble mixture over top of the jam. Bake for 35-40 minutes. Let cool. Cut into 8 squares and enjoy!
